REFRESHING MIXED FRUIT COUSCOUS SALAD
1/2 cup frozen orange juice concentrate, cold not frozen (see NOTES)
2 Tbsp white wine vinegar
1 Tbsp sugar (or substitute)
1 Tbsp olive oil
zest from half an orange
1 1/2 cups water
1/4 tsp salt
3/4 cup pearl couscous
4 different types of mixed fresh fruits, as much as you like, peeled (if desired) & diced to size, if needed
1/2 Tbsp sugar (or substitute)
fresh mint leaves, minced, to taste
1. To make salad dressing, combine orange juice concentrate, vinegar, sugar, olive oil and orange zest to a blender. Process on high speed for 30 seconds. Set aside.
2. Place a pot or a saucepan over medium heat. Add couscous and toast, stirring frequently, until golden-brown and fragrant. Pour in water and stir in salt. Bring to a boil. Reduce heat and cook, partially covered, until couscous is just tender but still a little chewy, 5 – 7 minutes. Drain and rinse under cool running water. Shake to remove as much water as possible. Allow couscous to rest for 10 minutes in strainer or sieve. Fluff with a fork. Transfer couscous into a large bowl. Coat couscous with some of the salad dressing. Cover and refrigerate until you put salad together.
3. A little over an hour before serving, sprinkle fruit with 1/2 Tbsp sugar and refrigerate 1 hour. Right before serving, put salad together by adding couscous and mint to mixed fruit. If desired, add more dressing. Combine and serve.
NOTES
1. If you find the flavor of orange juice concentrate strong, substitute the concentrate with orange juice.
I usually like eating this salad on a hot summer afternoon or evening. However, you can make and eat this salad all year long. I also usually eat this salad as an appetizer. Sometimes I eat it as a healthy dessert. But, if you decide to eat this salad as a healthy entree, just add in grilled chicken strips, grilled steak skewers or grilled fish.
