Today I am sharing a banana bread recipe that is gluten free and vegan. It is so simply yet SO delicious.

Vegan Banana Bread

3 Bananas (mashed)
1 Cup Garbanzo Flour
1/2 Cup Oat Flour
1/3 Cup Date Nectar
1/3 Cup Coconut Milk
1 Tbsp. Apple Cider Vinegar
2 Tbsp. Flax seeds (ground)
1 Tsp. Vanilla
2-3 Tsp. Cinnamon (depends how much you like cinnamon)
1 Tsp. Baking Soda
1/2 Tsp. Baking Powder
Pinch of Salt

1. Preheat oven at 350 F.
2. Mash bananas with fork or a hand mixer.
3. In a bowl combine dry ingredients.
4. In a little bowl combine coconut milk and apple cider vinegar.
5. Add date nectar, vanilla, coconut milk/apple cider mixture into the bowl with dry ingredients.
6. Combine everything till well combined but don’t over mix.
7. Pour mixture into a bread pan, bake at 350 F for 40 minutes.
