Busy Mom One-Pan Dinner!!👇🏼
When Dr. Taylor from Minnesota Pork told us she was expecting a baby this fall (!!!), we KNEW we had to make this busy-mom-dinner together!!
This is a great one to add to your fall rotation – it makes amazing leftovers too! 🍁🍎
We followed the One Pan Pork Loin with Brussels and Apples recipe from The Real Food Dietitians and it is SO GOOD. I added sweet potatoes to bulk it up a little more (and because my family loves them!). https://therealfooddietitians.com/one-pan-pork-loin-with-brussels-and-apples/
INGREDIENTS:
✔️Pork Loin
✔️Sweet Potatoes (the recipe doesn’t call for these, but I added 2! Totally personal preference!)
✔️Brussels Sprouts
✔️Apples
✔️Red Onion
✔️Olive Oil or Avocado Oil
✔️Maple Syrup
✔️Dijon Mustard
✔️Garlic
✔️Fresh herbs/seasoning (I used salt, pepper, thyme and rosemary!)
👉🏼TO MAKE: chop brussels sprouts, sweet potatoes, apples and red onion and place on sheet pan. Place pork loin in the center of the pan and cover with rub. Drizzle veggies with olive oil and season with salt and pepper. Bake at 400 for ~25 minutes, and enjoy!!
🤓PRO TIP from Dr. Taylor: pork loin is considered “extra lean” and has the same amount of fat as skinless chicken breast. One serving (which is about the size of a deck of cards) has 23 grams of protein!!
