I used to be at the same place revolving around same set of questions until one day, this idea came to my mind to make Khichdi but without rice. I followed same technique as rice dal Khichdi but added veggies here which increases the fiber in the Khichdi.

I am pairing QUINOA KHICHDI with yogurt which makes the entire meal high protein. Along with that, there is a plate of salad which I am going to eat first because it will help my blood sugar level to have less spike than other way around.
Quinoa is one of the grain which is a complete PROTEIN PROFILE & I am planning to share amazing QUINOA RECIPES GOING FORWARD, stay tuned.
QUINOA KHICHDI RECIPE
INGREDIENTS
1/4 cup dry qty quinoa (You can use either white quinoa or tri-colour quinoa)
1/4 cup dry qty yellow Moong dal
1 tsp desi ghee
1/2 tsp cumin seeds
1 tsp finely chopped ginger
1 green chilli
1/3 cup finely chopped onions
30 gm peas
60 gm finely chopped carrots
(You can add beans too approx 40 Gm)
Soaked quinoa
Soaked dal
Salt as taste
1/4 tsp turmeric powder
Fresh cilantro for garnishing
Fresh lemon juice
Directions
1. In two separate bowls, add quinoa & dal, soak both for 30 min. After soaking, transfer to a colander, wash them 2-3 times & keep it aside.
2. In a pressure cooker, add ghee, ginger, green chilli, cumin seeds. Sauté for few seconds. Then add onions & sauté for 2-3 min.
3. Then add peas, carrots & cook for 2-3 min. Add soaked dal & quinoa, spices & mix well. Cook for 6-8 min.
4. Add 2.5 cup of water, let it boil. Then cover the lid & pressure cook for 2-3 whistles. Let it depressurize naturally & voila! Quinoa Khichdi is ready.
5. Add cilantro & lemon juice while serving
MINT CHUTNEY RECIPE
INGREDIENTS
1/2 cup mint leaves
1 cup cilantro leaves with stems
1 garlic & 1 green chilli
1/2 tsp cumin powder
Salt as taste
1/4 tsp chaat masala
1/4 cup curd
1/2 lemon juice
1/3 cup onions (optional)
Directions :
In a blender, add everything mentioned in the ingredient list & blend to make green chutney.
While serving QUINOA KHICHDI, pair with 150 Gm fat free Greek yogurt & add 1-2 tsp mint chutney in it. Also. Add salad & start your meal with salad, eat salad first & then rest of the meal.
