Ingredients:
1 liter full-fat milk
¼ cup lemon juice
¼ cup water
1 tbsp Eno
¼ cup Hung curd
2tbsp Butter
1 tsp Salt
Instructions:
– Heat the full-fat milk on medium heat until it bubbles slightly (do not bring it to a full boil).
– Gradually add the lemon juice in small batches while continuously stirring the milk. The milk will start to curdle and separate.
– Mix ¼ cup water with 1 tbsp of Eno. Stir well to let the fizz escape. Set this mixture aside.
– In a blender jar, add the strained milk solids (paneer), hung curd, butter, salt, and the prepared Eno water.
– Blend everything until you achieve a smooth, creamy texture.
