This Southwest Turkey Skillet is a one-skillet meal that couldn’t be any easier to whip together for RV cooking. The black beans, tomatoes, and corn in the dish make it a complete meal with nutritious vegetables and legumes as your carb sources. Sadly, vegetables and legumes are often overlooked as a carb source. I encourage you to practice building your meals using this mindset of replacing grains with starchy vegetables from time to time to get those micronutrients in!
This recipe uses more canned goods than I typically use. But, because we are using canned foods the prep time is very quick! You will only need 5-10 minutes to chop an onion, bell peppers, some garlic, and strain and rinse some canned items. Always purchase low-sodium canned good options when possible. Since the canned goods make this dish easy to make, it is perfect for beginner cooks. It is a great way to get comfortable in the kitchen by combining ingredients.
Not only is this a great dish for new cooks to make, but it is also a great “last minute” dish. When you are out of fresh produce, call on your pantry to help out! Since my refrigerator is dorm-sized this recipe is perfect for the end of the week when I may not have fresh veggies on hand to use. Pantry goods to the rescue!
