Vegan Zucchini Loaf Recipe:
Ingredients:
* 1 1/2 cups of grated zucchini
* 1/3 cup of plant based milk
* 1/4 cup of olive oil
* 1/2 cup of sweetener (brown sugar, maple syrup, honey)
* 1 tsp of vanilla
* 1 1/2 cups of flour
* Dash of salt
* 1 tsp of baking powder
* Chocolate chips (optional)
Directions:
1. Grate and drain 1 ½ cups zucchini.
2. Mix ¼ cup olive oil, ⅓ cup plant-based milk, ½ cup sweetener, and 1 tsp vanilla. Add zucchini.
3. Add 1 ½ cups flour, dash of salt, 1 tsp baking powder, and chocolate chips (optional).
4. Bake at 350°F for 45-50 minutes.
