CHICKPEA WITH DILL

For the chickpea stuffing:
1 cup cooked chickpeas
½ cup bell pepper, finely chopped
¼ cup onion, finely chopped
2 tbsp roasted sunflower seeds
2 tbsp mayonnaise or tahini
1 tbsp fresh dill, coarsely chopped
Salt and pepper to taste

Other ingredients:
Multi-grain bread slices
Butter
Fresh endive lettuce

EGG SALAD SANDWICH

For the egg filling:
6 hard-boiled eggs
¼ cup mayonnaise
¼ cup onion, finely chopped
½ cup bell pepper, finely chopped
â…› tsp paprika
1 tsp mustard paste
1 tsp lemon juice
salt and black pepper to taste

Other ingredients:
Multi-grain bread slices
Butter
French bread
Iceberg lettuce leaves

HUNG CURD WITH VEGGIES

For the hung curd filling
1 cup hung curd
½ cup carrot, grated
½ cup cabbage, finely chopped
½ cup colorful capsicum, finely chopped
¼ cup corn, boiled
½ tsp paprika
¼ tsp cumin powder
Salt and pepper to taste

Other ingredients:
White bread slices
Butter
Baby spinach
Swiss chards
