Italian Sausage with Tortellini Soup: Looking for an easy recipe to simplify meal prep? This Italian sausage with tortellini soup on Sunday is the perfect option! Making it an Italian chicken sausage soup keeps it lean and packed with protein. Loaded with fresh veggies and flavor. This will become a go to in your house.
Ingredients
-1 T Olive oil
-2 t Minced garlic
-1/2 Large white onion, chopped
-2 C Carrots, chopped
-1 Medium Zucchini, chopped
-1 lb Chicken sausage, remove from casing
-2 C Baby spinach, raw
-1 T Italian seasoning
-1 t Ground black pepper
-1 t Red pepper flakes (optional)
-6 oz Cheese Tortellini, uncooked (dry not fresh pasta)
-1 28 oz can of diced tomato with juice
-4 C Low sodium chicken stock
-2 C Water
Instructions
1. Heat large stock pot over medium high heat
2. Add olive oil and garlic, sauté for 30 seconds
3. Add onion, carrot and sausage, break sausage up into bits with a large spoon. Sauté for 3-5 minutes
4. Add seasoning- Italian, pepper and red pepper flakes
5. Add diced tomato
6. Add chicken stock and water
7. Stir to combine, bring to boil and reduce heat to simmer for 10 minutes
8. Add tortellini and zucchini, bring back to boil and then reduce heat to simmer for 10 minutes
9. Add spinach, stir and simmer for 1 more minute
Enjoy! Top with grated parmesan cheese and serve with crusty bread.
