Pistachio Cream Stuffed Cookies

Ingredients:

2 eggs

1 cup brown sugar

250 grams butter

3 cups flour

2 packs of milk chocolate with pistachios

1 teaspoon vanilla

1 teaspoon baking powder

For the filling:

1 teaspoon pistachio cream

Filling preparation:

Melt 2 packs of white chocolate for baking and 2 tablespoons of pistachio cream in the microwave.

Melt the butter and mix with brown sugar. Add eggs at room temperature and whisk.

Add flour, baking powder, and vanilla; mix with a spatula. The dough will be sticky. Add the chocolate pieces and let the dough rest in the fridge for 30 minutes to become more manageable.

Take small pieces of dough and place them in mini muffin molds lined with baking paper. Add a teaspoon of the pistachio filling in the center, then cover with another small piece of dough, pressing to combine.
