– Prep: 50 mins
– Bake: 30 mins
– Rest: 2.5 hrs
– Total: 5 hrs

▶️Ingredients:
Ingredients for the main dough:
– Whole Oat flour: 50 g
– Bread flour: 260 g
– Whole wheat flour: 12 g
– Whole rye flour (Roggen): 4 g
– Sugar: 6 g
– Salt: 5 g
– Dry yeast: 5g
– Lukewarm water: 150-175 ml
– Olive oil: 13 ml
– Flaked Barley: 15 g
Ingredients for the crust:
– Some flaked barley
▶️Equipment:
– Suitable bowls
– Silicone Spatula
– Plastic wrap
– Parchment Paper
– Silicon confectionery brush

▶️ Instructions:
– First, add the ingredients one after the other
– Mix together
– Pour lukewarm water
– Mix thoroughly
– Knead for 5 minutes
– Add Olive oil in 2 times
– Add some flaked barley then continue kneading
– You can use an electric mixer to knead better
– Let it rest for 30 minutes
– Divide into 6 pieces
– Make each piece ball
– Let them rest for 20 minutes
– Spread out the dough and roll it like I did
– Put them aside for an hour
– Brush them with some water
– Put some flaked barley on them
– Make a surface scratch on the dough
– Bake for 25 minutes at 200 °C or 390°F

▶️ Tips & Tricks:
– Preheat the oven for 15 minutes before baking
– Don’t forget to use parchment paper if needed
– Pay attention to the times mentioned for resting the dough
– The baking time in the oven depends on its model and may be slightly different, it is better to keep an eye on it
