Recipe and Ingredients
-1 kg chicken thighs
-2 Zucchini’s (Cube cut)
-2 Potatos (Cube cut)
-1 yellow pepper (Cube cut)
-1 red pepper (Cube cut)
-2 small onions (Cube cut)
-1 carrot (Cube cut)
-1/2 cup olive oil
-1 tsp salt
-1/2 tsp black pepper
-1 tsp cayenne pepper
-1/2 tsp oregano
-1/2 tsp parsley
-1/4 tsp thyme
-1/4 tsp red chili flakes
-3 tsp chopped garlic
-3-4 tbsp lemon juice
-1 tsp honey

In a bowl add -1/2 cup olive oil, 1 tsp salt, 1/2 tsp black pepper, 1 tsp cayenne pepper, 1/2 tsp oregano, 1/2 tsp parsley, 1/4 tsp thyme, 1/4 tsp red chili flakes, 3 tsp chopped garlic, 3-4 tbsp lemon juice and 1 tsp honey. Mix well and add 1 kg chicken thighs and let it marinate for 1/2 an hour.

After 1/2 an hour saute the chicken thighs in pan until its light brown. Let the chicken rest. Now in a baking tray add 2 Zucchini’s (Cube cut), 2 Potatos (Cube cut), 1 yellow pepper (Cube cut), 1 red pepper (Cube cut), 2 small onions (Cube cut) and 1 carrot (Cube cut). Add the left over olive oilve marinate from the chicken on the vegetables and mix well. Now place the sauted chicken thighs on top of veggies and bake them for 30-35 mins at 180 temperature.

The chicken thighs and veggies are ready to be served!
