Healthy Veg Sandwich Recipe
A quick and nutritious Veg Sandwich packed with fresh vegetables and wholesome flavors! Perfect for a light breakfast, lunch, or snack.
Ingredients:
2 slices of whole-grain or multigrain bread
2 tbsp hummus or low-fat cream cheese
4-5 slices of cucumber
2 slices of tomato
2-3 thinly sliced onions
1 small handful of spinach or lettuce leaves
1 grated carrot
1 tsp lemon juice
A pinch of salt and pepper
Optional: A sprinkle of chili flakes or oregano
Instructions:
1. Spread hummus or cream cheese on one side of each bread slice.
2. Layer cucumber, tomato, onion, spinach/lettuce, and grated carrot on one slice.
3. Sprinkle with lemon juice, salt, and pepper (and chili flakes or oregano if desired).
4. Cover with the other slice of bread, cut into halves or quarters, and serve fresh!
Tips:
For extra crunch, toast the bread lightly before assembling.
Add avocado or shredded cheese for more flavor.
