Ingredients:

200g moong sprouts
40g hung curd
20g besan (gram flour)
1 small tomato, diced
1/2 medium carrot, diced
1/2 tbsp sesame seeds
2 green chilies
1.5 small onions (1 chopped, 0.5 for blending)
1 cucumber, diced
Salt, black pepper, and lemon juice to taste
Coriander leaves for garnish
Steps:

Prepare the Moong Balls:
Blend moong sprouts, half an onion, garlic, green chilies, and coriander leaves into a coarse paste.
Transfer to a bowl, and mix with besan, salt, and black pepper. Form small balls and coat them with sesame seeds.
Air fry or microwave until golden and crisp.
Prepare the Salad Base:
Combine diced onion, cucumber, carrot, and tomato in a bowl.
Add salt, black pepper, lemon juice, and chopped coriander leaves. Toss well.
Prepare the Hung Curd Dressing:
Mix hung curd with a pinch of salt and a dash of lemon juice.
Assemble the Salad:
Spread the hung curd dressing on a plate.
Place the salad mix on one side.
Add the crispy moong balls on top and garnish with coriander leaves.
