Today’s video is about how to make easy Mexican Keto pozole for New Year’s Day. Join along and cook with me low carb healthy Mexican low carb recipes. The pozole came out great! Although I have enjoyed pozole many times, this was the first time I made it myself.
This recipe was fairly easy and can be cooked in the Instant Pot or in a regular 8 qt. pot.
Traditional Mexican pozole is made with hominy. You can substitute the hominy for cauliflower. If you do, add the cauliflower until right before you serve it.

Ingredients you will need:
1-2 lbs pork meat (I used pork sirloin roast)
2 oz. chile ancho peppers
2 oz. guajillo peppers
2 chile de arbol peppers (optional if you want it spicy)
2 tbsp pork lard or avocado oil
6-8 cups chicken stock
8 garlic cloves (peeled and minced)
1 medium white onion (peeled and diced)
2 bay leaves
1 tbsp ground cumin
1 tbsp dried Mexican oregano
sea salt
Optional Toppings:
chopped fresh cilantro
fresh lime juice
shredded cabbage
diced avocado
thinly sliced radished
I served my bowl with low carb Susalia tostadas. These are sold in Mexico and are hard to find in the US. I do live in a city that borders Mexico and we have some Mexican products available and these tostadas are some of them. They are sometimes available on Amazaon. (Link below.)
