Grilled Chicken Salad Recipe

Ingredients
1 large chicken breast (about 200g)
4 cups mixed greens
1 cup cherry tomatoes, halved
1 cucumber, thinly sliced
2 tbsp balsamic vinegar
2 tbsp olive oil
Salt and pepper, to taste

Instructions
Prepare the Chicken:
Preheat your grill or grill pan to medium-high heat.
Season the chicken breast with salt and pepper.
Grill for about 5-7 minutes on each side or until fully cooked (internal temperature of 165°F/74°C).
Once cooked, let it rest for 5 minutes, then slice into thin strips.
Assemble the Salad:

In a large bowl, combine the mixed greens, cherry tomatoes, and cucumber.
Make the Dressing:

In a small bowl, whisk together the balsamic vinegar and olive oil. Add salt and pepper to taste.

Combine and Serve:
Top the salad with the grilled chicken slices.
Drizzle the dressing evenly over the salad.
Toss gently to combine or serve as is with the dressing on the side.
