welcome dear friends, here we present a healthy very delicious recipe of a coconut cake with only 360 calories in total without the optional topping, the following are the ingredients and important tips to ensure the same result as shown in the video, trust me try it and tell me your opinion:
– 2 whole eggs at room temperature
– add vanilla (ground or liquid)
– mix well as shown to ensure a fluffy mixture
– add 1 TSP. of honey for sweetness (you can add any other like stevia and if you diabetics use a sweet factor approved by you doctor)
– add 80 grams of yogurt (Greek or ordinary) at room temperature
– add 5 TBSP. of soft coconut and mix again, if needed add an extra spoon to adjust the mixture as shown in the video
– add one TSP. of baking powder and one TSP. of white vinegar “it helps a lot to reach a fluffy mixture”
– glaze your pot with vegetable oil and place in a pre-heated oven for 20 – 25 (depending upon your oven) at 180 Celsius in the middle rack.
– topping is optional the cake without topping is very delicious and have a super aroma
– calories are computed without topping
