I am LOVING this vegan chick’n avocado salad on the weekends for lunch. I throw everything together and we basically just eat it from the bowl. Although I don’t tend to eat more processed vegan foods like
“chick’n” very often, it’s fun to recreate non-vegan salad recipes with products like Morningstar Farm’s chick’n strips and make the vegan version taste just as good!

Recipe
For the Dressing:
2 tbsp tahini
1 tbsp mustard
2 tbsp maple syrup
2 tbsp balsamic vinegar
2 garlic cloves, minced
salt + pepper

For the salad:
1 head of romaine, cleaned and chopped
2 cups purple cabbage, chopped
1 avocado, sliced
1/2 cup sauerkraut
