Recipe:
80 g milk
24 g xylitol
15 g whey protein or milk powder
10 g corn starch
Sprinkle guar gum
120 g frozen fruit (strawberries, banana, mango, etc)
120 g ice
A couple of drops of vanilla extract
Instructions
Add the ingredients in the order listed to a high-powered blender like a Vitamix or Ninja. Set to speed 1 (low) for 30 seconds before gradually increasing to speed 5 for another 30 seconds.
Turn off the blender. Mix the ice cream up and test for consistency, it should be like soft serve with some small ice chunks. To get it smoother, set on speed 1 again for 30 seconds and gradually increase the speed again. Do not over mix, blend just until the mixture is to your liking.
