Ingredients:
– Main:
– 2 cups (60g) spinach
– 5 cashews
– 50g low-fat paneer
– 1 small onion (60g, finely chopped)
– ½ medium carrot (30g, diced)
– 30g bell pepper (chopped)
– 30g cabbage (chopped)
– ½ tsp ghee

– Spices:
– Salt (to taste)
– Red chilli powder (to taste)
– Coriander powder (1 tsp)
– Oregano (½ tsp)

Steps:

1. Prepare the Spinach Puree:
– In a blender, add spinach, cashews, paneer, and a little water. Blend until smooth.

2. Cook the Vegetables:
– Heat ghee in a pan.
– Sauté onion until translucent, then add carrot, cabbage, and bell pepper. Cook until slightly tender.

3. Add Spices:
– Mix in salt, red chilli powder, coriander powder, and oregano. Stir well.

4. Combine and Cook:
– Pour the spinach puree into the pan.
– Mix thoroughly and let it simmer for a few minutes until flavors combine and the subzi thickens.

5. Serve:
– Pair this flavorful subzi with rice or roti and enjoy.
