Recipe: Easy and Healthy Salad
Ingredients:
100g (3.5 oz) of lettuce
1 large carrot
Half of an English cucumber, 230g (8.1 oz)
2 apples
1 tablespoon of linseed
2 ½ tablespoon of lemon juice
1 tablespoon of extra virgin olive oil
Salt and pepper
Instructions:
1. Peel and core the apples. Cut into strips, drizzle 1 tablespoon of lemon juice and mix. Dice the cucumber, chop the lettuce and cut the carrot into thin strips or grate.
2. To a large bowl, add lettuce, cucumber, apples, carrot, linseed, 1 ½ tbsp of lemon juice, olive oil, 1 teaspoon of salt and ½ teaspoon of pepper or to taste. Toss until combined.
3. Serve on it’s own or as a side. Enjoy.
Notes/Tips:
– The salad can last in the fridge in an airtight container for up to 3 days.
