Oh my gosh. This Maple Kale Salad with Cranberries and Blue Cheese is everything. Please, please do not underestimate its simple vibe or the fact that I’m using kale. 😂 It is truly DELICIOUS and so festive. I made this for friends with a side of roasted pork and NO ONE cared about the pork. 😂It was all about the salad! It keeps so well (prep ahead instructions are included in the recipe). I ended up eating it for a solid three days and it was as good as the day I made it (yes, even the apples! See my notes below!)
A few things to keep in mind:
✅ Massage the kale for a tender, delicious result.
✅Swap the blue cheese for feta or goats cheese if blue cheese isn’t your thing.
✅ Soak your apples in water with a little bit of salt to stop them going brown (such a fantastic tip for lunch boxes too!)
✅ Don’t skip toasting the pecans – and YES, you can do this in the microwave!
