Healthy Chocolate Chip Banana Bread
It is moist, delicious, fluffy and healthy! This is sugar-free and made with white wholemeal flour!
Main Ingredients:
•2 big overripe banana (about 280-300gr)
•50 ml Almond Milk (or any milk you fancy)
•220 gr whole meal flour
•Chopped walnut & dark choco chip for garnish (optional)
Wet Ingredients:
•75 ml melted Coconut Oil or light olive oil
•2 large eggs, room temperature
•65ml honey
•90ml maple syrup (you can use whole honey or whole maple syrup)
Seasoning Ingredients:
•1 tsp baking soda
•1 tsp vanilla extract
•¼ tsp ground nutmeg
•½ tsp salt
•½ tsp ground cinnamon
Filling Ingredients:
•20gr chopped walnut
• 55 gr chocolate flakes
Steps:
1.Preheat the oven at 170°C. Lightly grease the pan with oil, and dust with wholemeal flour. Knocking the excess flour. Set aside. In a different bowl, add the whole meal flour. Set aside.
2. In a container/bowl, add all the “Wet Ingredients”. Mix well until well combined.
3. In a bowl, mash the bananas with a fork. Throw into “Wet Ingredients”, stir well. Add Almond Milk & “Seasoning Ingredients”. MIx well until combined.
4. Pour the onto wholemeal flour gradually to stop from lumpy. Mix only until well combined. Do not overmix.
5.Add the “Filling Ingredients”. Mix well gently until well combined, then pour into the pan. Spread evenly and sprinkle the garnish.
6.Bake for 40-45 minutes or until the top become golden brown or until a toothpick inserted into the center comes out clean.
7.Remove from the oven, let it sit in the pan until it cool down. Slice and serve!
