Sourdough Bread Recipe

Ingredients:

330g water
10g salt
100g sourdough starter
450g bread flour

Instructions:

1. Mix Dough: Combine flour and water until no dry spots remain. Cover and rest for 30 min.

2. Add Salt & Starter: Mix in starter and salt until fully incorporated.

3. Stretch & Fold: Do 3 sets of stretches and folds, resting 30 min between each.

4. Bulk Ferment: Let dough rise at room temp for 3–4 hours.

5. Shape: Shape into a boule or batard and place in a floured proofing basket.

6. Cold Ferment: Cover and refrigerate overnight (12–24 hrs).

7. Preheat Oven: Heat oven to 480°F with a Dutch oven inside.

8. Prepare Dough: Flip dough onto parchment, score, and place in the Dutch oven.

9. Bake: Bake covered at 450°F for 30 min, then uncovered at 400°F for 15 min.
