Disclaimer: This recipe contains a very small amount of rye flour, making this recipe “dirty” keto. The flour goes through a sourdough fermentation, taking the glycemic index down from 78 to 52. Additionally, because of the small amount used, it only adds 1 net gram of carbs per chaffle. Nevertheless, if you define “keto” as not including any grain, then this is not “keto”. If you define “keto” as keeping your net carbs low enough to stay in ketosis, I think you’ll enjoy the flavor of this a lot.

If you decide to make a starter, after a week of getting it bubbly at room temperature, store it in your fridge. Once per week, remove a TB of starter (use it to make chaffles) and stir in 1/2 TB of rye flour and 1/2 TB of warm water. This feeds the yeast and keeps it alive.
