As the weather starts to warm up, it’s time for low-calorie, high-protein fresh summer snacks! This tasted so fresh, and with only 280 calories and 21g of protein, you’ve got to try it for yourself!
👨🍳 Ingredients
✅ 95g Tuna in Olive Oil
✅ 1 Large Cucumber
✅ 15g Sriracha
✅ 15g Fat-Free Mayo
✅ 30g Jasmine Rice
✅ 5g Everything Bagel Seasoning @mingleseasoning
✅ Dill
✅ Salt & Pepper
🥣 Method:
1. Prepare the Rice: Cook 30g of jasmine rice according to the package instructions. Set aside to cool.
2. Mix the Tuna: In a bowl, combine the 95g tuna (drained if preferred) with 15g of sriracha and 15g of fat-free mayo along with salt and pepper. Mix well until the tuna is evenly coated.
3. Prepare the Cucumber: Slice the large cucumber in half lengthwise. Use a spoon to scoop out the seeds, creating a hollow for the filling.
4. Assemble: Divide the cooked rice evenly between the two cucumber halves, pressing it down gently. Top each half with the tuna mixture.
5. Season: Sprinkle with 5g of Everything Bagel Seasoning, a pinch of dill, and salt and pepper to taste.
