Here’s a simple and delicious tomato rice recipe you must try !
Ingredients-
1 cup cooked rice
1 tbsp ghee /oil
1 tbsp urad dal
1 tsp mustard seeds
1 tsp cumin seeds
2 dried red chillies
10-12 curry leaves
1 onion (chopped)
1 tbsp ginger garlic paste
1/2 tsp turmeric
1 tsp red chili powder
1 tbsp sambhar masala
2 large tomatoes (chopped)
Salt to taste
Water as required
Coriander leaves for garnishing
Instructions-
🌿Heat oil or ghee in a pan. Add urad dal,cumin and mustard seeds, and let them splutter. Add dried red chillies and curry leaves .Add chopped onions and sauté until golden brown.
🌿Stir in the ginger-garlic paste . Cook for a minute, then add turmeric ,red chilli powder and Sambhar masala. Add the tomatoes and salt, cook until they soften and the oil separates from the mixture.
🌿 Add the cooked or leftover rice to the pan and stir gently to combine. Cook for 2-3 minutes, allowing the rice to absorb the flavors.
🌿 Once cooked, remove from heat and let it sit for 5 minutes.Garnish with chopped coriander, and serve hot.
