1 cup bell pepper strips
1 cup zucchini sticks
1 cup potato wedges
1 cup chickpea flour (besan)
1/2 cup rice flour
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon dried oregano or mixed herbs
Salt to taste
Water (as needed)
Oil for frying
Instructions:
Preparing the Vegetables:
Wash and cut the vegetables into the desired shape and size (sticks, florets, or wedges).
Pat the vegetables dry with a kitchen towel to remove excess moisture.
Making the Batter:
In a mixing bowl, combine chickpea flour, rice flour, turmeric powder, red chili powder, cumin powder, coriander powder, dried oregano, and salt.
Gradually add water to the flour mixture, whisking continuously, to form a smooth and thick batter.
Coating the Vegetables:
Heat oil in a deep frying pan over medium heat.
Dip each vegetable piece into the batter, ensuring it is well coated.
Carefully drop the coated vegetables into the hot oil and fry until they are golden brown and crispy.
Draining and Serving:
Remove the fried vegetables from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
Repeat the process with the remaining vegetables.
