Low Fat Banana Pecan Bread:
4 mashed ripe bananas
2 teaspoons baking soda
1 cup or 240mls low-fat plain yogurt
1/2 cup (120 ml) vegetable oil or light olive oil
1.5 cups (330 grams) light brown sugar
2 eggs or 4 egg whites
2 teaspoons pure vanilla extract
3 cups ( 360 grams) plain flour
1 cup or 100 grams of chopped nuts or chocolate chips
1 teaspoon ground cinnamon
2 teaspoons baking powder
Makes 2 loaves
Pre heat the ovens to 150c fan or 350 f
Mash bananas, add in eggs, yoghurt, vanilla extract ( mix together)
Sift in all the dry ingredients and mix until just combined & the nuts
Bake in loaf pans for 40 – 50 minutes
You may want to cover 30 minutes into baking to prevent the loaves being too brown.
