This easy salad recipe for weight loss is simple enough for an easy healthy lunch or dinner, yet elegant enough to serve your next party. The combination of goat cheese pomegranate flavors compliment each other perfectly. The crunch from the pecans and apples give it an amazing texture. Personally, I recommend making this an arugula salad as the spiciness adds another layer of flavor. If you prefer a more mild green, I recommend making this a spinach salad. I also recommend Marzetti Simply balsamic vinaigrette dressing. The flavor of that dressing is the perfect balance of balsamic vinegar and extra virgin olive oil. Using a store bought dressing makes this recipe easy enough for a beginner cook. (You can use your favorite balsamic vinaigrette if you can’t find Marzetti’s.) If you want to add protein I recommend rotisserie chicken.
Beyond the beauty, flavor and crunch, you will love how simple this salad is to make. Prep time is less than ten minutes total! Slicing the apples is the most “difficult” part and honestly I don’t think I can call that difficult. Using an apple apple corer and slicer keeps the pieces around the same size. If you want to make it as easy as possible, purchase pre-sliced apples and pomegranate seeds instead of the whole fruit.

4 oz Arugula
1/3 Cup Pecans
1/3 Cup Crumbled goat cheese
½ Cup Pomegranate seeds
1 Medium Apple, sliced
1/2 Cup Marzetti’s Simply Balsamic Vinaigrette dressing
How to Make the Pomegranate Goat Cheese Salad
1. Place arugula in a large bowl
2. Slice your apple into wedges and place on top of the arugula.
3. Sprinkle pecans over top of salad
4. Sprinkle goat cheese over top of salad
5. Sprinkle Pomegranate seeds over top of salad
6. Top with dressing when ready to serve
