Mixed Veg Sandwich with Paneer Mayo Recipe
Ingredients:
• For the Veggie Filling:
• 1/4 cup carrots, finely chopped
• 1/4 cup onions, finely chopped
• 1/4 cup capsicum, finely chopped
• 1/4 cup bell peppers, finely chopped
• 1/4 cup mushrooms, finely chopped
• 1/4 cup broccoli, finely chopped and lightly steamed
• For the Paneer Mayo:
• 1/2 cup paneer (cottage cheese)
• 2 garlic cloves
• 1/4 tsp salt (adjust to taste)
• 1 tbsp fresh coriander leaves
• 1 tbsp fresh mint leaves
• Other Ingredients:
• Salt and pepper to taste
• Bread slices (any type you prefer)
Instructions:
1. Prepare the Veggie Filling:
• In a bowl, mix carrots, onions, capsicum, bell peppers, mushrooms, and lightly steamed broccoli. Set aside.
2. Make the Paneer Mayo:
• In a blender, add paneer, garlic, salt, coriander, and mint. Blend until smooth and creamy.
3. Combine the Filling:
• Add the paneer mayo to the mixed veggies. Mix well to coat the veggies evenly. Adjust salt and pepper to taste.
4. Assemble the Sandwich:
• Spread the veggie-paneer mayo mixture generously on a slice of bread.
• Cover it with another slice of bread.
5. Toast the Sandwich:
• Toast the sandwich on a pan or sandwich maker until golden brown and crispy.
6. Serve:
• Slice and serve hot with ketchup or a green chutney for a burst of flavor.
