Here’s a simple recipe for Mixed Vegetable Soup:
Ingredients:
1. 2 tablespoons olive oil
2. 1 onion, chopped
3. 3 cloves garlic, minced
4. 1/3 rd Cup Carrots, chopped
5. 1/3 rd Cup Peas, chopped
6. 1/3 rd Cup Corn, chopped
7. Green , Red & Yellow Capsicum
8. 1/2 green beans
9. Grated Ginger/ Green Chilli 1/2
10. 1/2 teaspoon Oregano
11. 1/2 teaspoon Red chili flakes
12. 1/2 teaspoon dried basil
13. Salt and pepper, to taste
14. Fresh Coriander , parsley or thyme, for garnish (optional)
Instructions:
1. Heat oil in a large pot over medium heat.
2. Saute onion, garlic, ginger , chilli for 2 mins
3. Add All Vegetables Beans ,Carrot , bell pepper, mixed vegetables and basil ( Optional) and cook for 7 to 8 mins
4. Bring to a boil, then reduce heat and simmer, covered, until vegetables are tender, about 5-7 minutes.
5. Season with salt ,pepper , chilli flakes & Oregano to taste.
6. Serve hot, garnished with parsley or thyme, if desired.
