SAVORY BREAKFAST BOWL

I’ve lost over a 100lbs eating high protein lowcarb meals. My first meal of the day really sets the tone and dictates how I feel the rest of the day, so I got with something thats high in protein, flavor, and also easy to make.

This is one of my favorite bfast meals – i have some variation of this everyday and just started adding a toasted lowcarb tortilla to go with it and it’s just amazing. As always, you can modify it however way you like.

Here is how I made it:

1.Start by boiling your eggs. I like the yolk on the medium jammy side, but if you want it firmer, just got 30-60 seconds longer. Just bring water to boil, then drop your eggs (straight out of your fridge) for a total of 7-7.5 mins. If you want a firmer egg, go on the longer end. If you want it more jammy go for 6 min 45 seconds. When they’re done, bring them out of the pot and drop into an ice bath for a few seconds to cool down.

2.Grab a serving dish (I love bowls) and add 1 serving cottage cheese as the base layer. You can also use thick greek yogurt if you dont like cottage cheese.

3.Remove the shell from your eggs, slice into your favorite shape, and add on top of the cottage cheese.

4.Finally, add some lower calorie flavorful additions and veggies like spices, herbs, or hot sauce. I like to add lots of diced Persian cucumber, some tomato, fresh cilantro, thinly diced shallot, and lots of Chile lime seasoning, everything bagel seasoning, and hot sauce. You can add whatever you like.

5.Top with a toasted lowcarb tortilla, break it with a spoon, and use the cracked tortilla pieces as a vessel! Food’s supposed to be fun to eat. You can also toast sourdough or your favorite bread, or leave the bread out altogether.
