Barnyard Millet Upma

Cooking time: 20-22 mins
Serves: 2-3

Ingredients:
1/2 cup barnyard millet
2 tbsp ghee
1 tbsp Chana dal
1 tbsp urad dal
7-8 cashew nuts
1 tsp mustard seeds
1/2 tsp hing
12-15 curry leaves
1 inch ginger, finely chopped
1 green chilli, finely chopped
1 onion, diced
3-4 tbsp fresh peas
3-4 tbsp carrots, diced
1 tsp salt
2 tbsp fresh coconut, grated
2 tbsp fresh coriander leaves, chopped

Instructions:
Thoroughly wash the barnyard millet and keep aside.
In a kadai, add ghee.
Once the ghee is hot, add Chana dal and fry for 10-15 seconds.
Then add urad dal and cashew nuts and fry for another 10 seconds.
Then add mustard seeds, hing and curry leaves and again fry for 10-15 seconds.
After this, add ginger and green chilli and fry for a second.
Now add onions and cook the onions on medium heat till they are translucent in colour.
Then add green peas and carrots and saute them on medium heat and cook for 3-4 minutes.
After this add washed barnyard millet and cook this millet with all the vegetables for another 2-3 minutes on medium heat till the millet is roasted lightly.
Add enough water, approximately 1 cup and mix well.
Add 1 tsp salt and 2 tbsp fresh coconut and mix well.
Now let the water boils, once the water is boiling, close the kadai with the lid and let the Upma cook on low to medium heat heat for approximately 7-8 minutes till the millet is cooked thoroughly and the water is also dried.
Now open the kadai and add coriander leaves and mix gently and again cover the kadai with the lid and switch off the flame.
Let the Upma be in the steam and open the kadai after 8-10 minutes and you will see the Upma will be fluffed and ready to serve.
Serve hot.
