Ingredients
1/3 cup + 2 tbsp rolled oats
1 tbsp vanilla protein powder
1/3 cup vanilla almond milk, unsweetened, or any other
plant-based milk
2 tbsp Mascarpone
1/4 cup cottage cheese, pureed in a blender *
1 tbsp maple syrup

For assembly
2 ladyfinger cookies
Brewed coffee, for dipping
Unsweetened cocoa powder, for dusting
Servings: 1 glass
Notes:
* To blend the cottage cheese, add a couple of tablespoons
of almond milk (or any other milk) so it’s thin enough to be blended.
Instructions
1. In a bowl, combine rolled oats, vanilla protein powder,
almond milk, Mascarpone cheese, pureed cottage cheese, and maple syrup.
2. Cover the bowl and leave in the fridge overnight.
3. In the morning, or just before you are ready to eat the
overnight oats, dip one of the ladyfingers inside the coffee and break it apart
on the bottom of the glass.
4. Then, cover with overnight oats from the bowl in the
fridge and dust with cocoa powder. Repeat it again one more time: layer one lady
finger cookie, overnight oats, and cocoa powder.
5. Serve immediately or store away in the fridge to serve
later.
