Ingredients:
3 very ripe bananas, mashed
2 eggs
60ml almond milk or yoghurt
80g sweetener of choice
45ml coconut oil or melted butter
1 tsp vanilla extract
120g-150g self raising flour (or GF)
70g protein powder* – I use vegan protein powder (or sub extra flour)
1 tsp baking powder
1/4 tsp salt
Mix ins of choice – chocolate chips, nuts, your fave spread
Method:
1. Preheat oven to 180°C and line a loaf tin.
2. Mix bananas, eggs, almond milk, maple syrup, melted butter and vanilla extract together in a large bowl.
3. Mix in the flour, protein powder, baking powder and salt until smooth.
4. Fold in any mix ins and bake for approx. 40-50 mins. Allow to cool slightly before slicing into 10-12 serves.
