Need a quick and healthy dinner? Whip this up with just 5 ingredients and pack in over 40g of protein. The flavors are PERFECT and this was devoured sooooo fast. And to be honest, if you’re short on time and can’t put it in the oven, it would still be delish without the peppers cooked! Put your meat mix and cheese in the microwave to warm, and spoon into your peppers!

INGREDIENTS
1 cup shredded chicken (see linked video for my batch prep hacks)
1-2 tbsp sugar free bbq sauce
1/4 onion, diced
8-10 small-medium peppers
10g shredded cheddar cheese (about 1/8 cup)
Optional: Greek yogurt, lettuce, tomato’s, ranch, etc for topping
DIRECTIONS
•Cook your chicken (for my batch prep method see linked video)
•Preheat oven to 350
•Wash peppers, chop in half, de-seed and arrange on a baking tray.
•Mix your chicken with onion and bbq sauce to your liking and stuff peppers, topping each with shredded cheese
•Bake for about 20 minutes, then broil for 2-3 if desired.
•Add toppings if desired and enjoy! (I liked the Greek yogurt and lettuce a lot! )

Fat: 7g
