Oats Upma

Ingredients

– Oil – 1 tablespoon
– Cumin Seeds – ¼ teaspoon
– Mustard Seeds – ¼ teaspoon
– Urad Dal – 1 teaspoon
– Chana Dal – 1 teaspoon
– Hing – a pinch
– Curry Leaves – 1 sprig
– Green Chilly (slit) – 2
– Ginger (chopped) – 1 teaspoon
– Onion (cubed) – 1
– Carrot (shredded) – 1 tablespoon
– Peas – 1 tablespoon
– Turmeric Powder – a pinch
– Oats – 1 cup
– Salt – to taste
– Water – 3 tablespoons
– Lemon Juice – as required
– Peanuts (roasted) – 1 tablespoon
– Cashew Nut (roasted) – 1 tablespoon
– Grated Coconut- 1 tablespoon
– Coriander Leaves – 1 teaspoon

Method
————

1. Heat 1 tablespoon of oil in a pan. Add cumin seeds, mustard seeds, urad dals, chana dal and hing.
2. When the dals starts to turn golden brown, add curry leaves, green chilly, ginger, onion, carrots and peas.
3. Fry till the onions, vegetables are soft. Cover and cook if needed. Add turmeric powder.
4. Add oats and salt. Fry for 1-2 minutes.
5. Add 3 tablespoons of water and lemon juice. Mix well and cook for about 2 minutes.
6. Add peanuts, cashew nuts grated coconut and coriander leaves. Mix well.
7. Serve hot with chutneys.
