Ingredients- 12-15 cutlets
2 cup dry soya chunks
2 tbsp gram flour/besan
2 inch ginger,
3 green chilli
3-4 garlic cloves
few coriander leaves, finely chopped
1 tsp roasted cumin powder
1 tsp red chilli powder
1 tsp coriander powder / dhania powder
½tsp haldi powder
1 tsp aamchur powder / dry
1 tsp chaat masala
1 tsp sesame seeds
salt to taste
oil for shallow frying
INSTRUCTIONS
1) soak the soya chunks into the hot water for 30 minutes.
2) drain the water and squeeze off excess water from the chunks properly. Blend the soaked soya chunks to coarse paste with ginger, garlic and green chilli.
3) shift to a plate, add spices like roasted cumin powder, red chilli powder, haldi, coriander powder, chaat masala, aamchur powder, and salt. Add sesame seeds.
Add coriander leaves.
4) mix everything well. Make tikkis/cutlet.
5) Shallow fry cutlets, when one side is golden, flip and fry the other side.
6) drain the soya cutlets on kitchen paper towels to remove excess oil.
7) serve soya cutlets hot with green chutney or tomato chutney.
Note-
* Squeeze water properly from soaked soya chunks for proper binding while giving cutlet shape.
* In facing difficulty binding , add 1 boiled and mashed potato or use crumbled paneer.
