Easy Vegan Lentil & Vegetable Stew, Healthy PlantBased Dinner Recipe, Mrs vegan
Ingredients & Preparation 🍲✨
For the Lentils
• Lentils: 1/2 cup
Wash thoroughly, then cook with water and a pinch of salt. Once tender, transfer to a bowl.
• Chopped parsley: 1 tbsp 🌿
• Lemon juice: 2 tbsp 🍋
• Salt: 1/2 tsp 🧂
Mix everything well, cover, and let it rest for 15 minutes to soak up the flavors. 😋
For the Veggie Stew
• Olive oil: 2 tbsp 🫒
• Onion: 1, finely chopped 🧅
• Salt: 1/4 tsp 🧂
• Garlic: 2 tbsp (minced) 🧄
• Spices:
• Paprika: 1/4 tsp 🌶️
• Black pepper: 1/4 tsp
• Turmeric: 1/4 tsp ✨
• Garam masala: 1/4 tsp
Sauté the onion with salt, garlic, and spices until golden and fragrant.
• Carrot: 1, chopped 🥕
• Cauliflower: 2 cups, chopped 🥦
• Tomato paste: 3 tbsp 🍅
Add the veggies and tomato paste, stirring to combine.
• Tomato purée: 1/2 cup 🍅
• Vegetable bouillon: 2 cubes (optional)
• Quince: 1/3 cup (optional)
• Boiled potato: 1, chopped 🥔
• Chopped parsley: 2 tbsp 🌿
Let everything simmer until the vegetables are tender and flavors come together beautifully.
For the Sauce 🥄✨
• Tahini: 2 tbsp
• Olive oil: 1 tbsp 🫒
• Lemon juice: 1 tbsp 🍋
• Salt: 1/4 tsp 🧂
• Black pepper: 1/4 tsp
• Brown sugar: 1/2 tsp 🍯
• Water: 2 tbsp
Whisk everything until smooth and creamy. Adjust the consistency with water as needed.
Serve & Enjoy 🎉
