In today’s video I’m sharing with you some of the foods I’ve been prepping ahead of time in my cottage kitchen to make healthy eating a little easier. In an ideal world I would do all of this in one day and be set for the week! But that’s just not something I can pull off right now in this season – but I feel like any prep on any day goes a long way! Having nutritious & filling snacks / meals we can just reach for during th busier times of our day is so helpful!

Make ahead Sausage Muffins:
1 cup flour (I did 128g soft white wheat)
1/4 tsp salt
1 1/2 tsp baking powder
2 tbsp butter
1 lb sausage
4 eggs, whisked
1 cup shredded cheddar

1. Cook sausage
2. Cut butter into flour
3. Mix in remaining ingredients
4. Spray muffin tin w/ avo oil & fill 2/3 full
5. Bake at 350F for 18-20 min
