Recipe:
It took more than time to bake the squash than other things. Around 30 minutes of baking, take out the garlic, red pepper & onion and let butternut squash & carrot cook for for 1 more hour. ( total time for butternut squash – around 1.5 hour.- it will wrinkle & shrink once done)
Once baking is done. Let it cool down before grinding in mixer, ( in mixer, add baked items- onion, garlic ( squeeze garlic to get the pulp) , carrots, butternut squash pulp, some coconut milk & water). Make puree & transfer this puree in the pan & add butter in it. Let it come to a boil , cover it to avoid splash while it’s boiling.
Garnish with pumpkin seeds & basil & optional( breadcrumbs). Enjoy.😊
