Tomato Soup Recipe:
3 lb tomatoes
1 red pepper
1 medium onion
4-5 cloves of garlic
salt and pepper to taste
2tsp basil
3/4 cup heavy whipping cream
2 cups of vegetable broth – homemade if you have it!
Roast tomatoes, red pepper, onion and garlic on cookie sheet lightly drizzled with oil over veggies for 25 minutes on 450 degrees Fahrenheit. Heat up vegetable broth in stock pot, once veggies are done roasting add them to your broth and combine with your immersion blender. You can also use a regular blender if you don’t have an immersion blender. Add in heavy whipping cream and mix till smooth. Enjoy!
