I made steak, roasted corn, and avocado salad from @shredhappens, and wow! It’s my favorite dish I’ve made in a while. I’ve included the full recipe below. I also watched @shey.hutz tutorial video on how to make steak, and for my first time making steak, I think it turned out pretty well! I seasoned my steak with salt, and pepper. I also broiled canned corn. Let me know if you try this recipe!

1. Season 1lb to 2lb steak of choice (Ribeye or NY Strip would be terrific here) with salt, pepper, and any spices you like, if any. Let rest for 1 hr to come up to room temp before cooking or grilling. I prepared mine to medium rare in a cast iron pan. Remove from the pan and let rest while you make the salad. Resting is key! 2. For the salad, roughly chop 5oz baby arugula – I like these in a smaller pieces for this salad, you dont want big arugula pieces, so finely chop, it makes a different. Add to a large salad bowl with 1/2 red onion finely diced, half a pint of cherry tomato, 1 cubed large avocado, & 1.5 cups roasted corn (you can roast yourself, or buy them frozen… I like the one from Whole Foods).

3. To make the dressing, in a food processor, process a large handful cilantro, 2-3 garlic cloves, 1/2 jalapeño seeded, and 1/2 jalapeño with the seeds for some heat, the juice of 1.5 limes, 2 tbsp sour cream, 2 tbsp olive oil, 1 tbsp Chile lime seasoning, and a generous pinch or two of salt.
Give it a taste and adjust as you like.

4. Crown the salad with your steak, cut into slices or diced up. Then top with 1/4 cup cotija blue cheesee or got cheese.

5. Pour over your dressing, give it a really good toss, and enjoy.
