I wish I knew how easy it was to make crunchy lentil crackers at the beginning of my health journey! It’s such a simple process that only takes about 10 minutes of hands on time and results in a super crisp (but sturdy) high protein, high fiber healthy snack!

INGREDIENTS
1 cup red lentils
Water
Optional: 2 tbsp ground flaxseed
Seasoning of choice (I used @osmosalt Vidalia onion and everything but the bagel, use code 2explorewellness to save)
DIRECTIONS
•Soak lentils overnight and rinse really well before draining and adding to a blender.
•Preheat oven to 350
•Add about 1/2 -3/4 cup water, just enough to reach about 1/2 way up the lentils
•Add salt and other seasonings before blending well.
•Pour on a parchment lined baking sheet and spread very thin and even, then top with extra seasoning if desired.
•Bake for 25 minutes before cutting into pieces as desired, then return for 10-15 more minutes
•(You may want to take the thinner pieces out early once crispy, and leave thicker ones in longer for more crunch!)
•Let cool and enjoy!
