Everyday Healthy Series – Turkish Menemen
Recipe (Serves 2)
1.5 large peeled tomatoes
1 tbsp butter
1 tbsp olive oil
2 tbsp chopped onions
2 tbsp chopped green peppers (Turkish peppers or capsicum)
1 tbsp tomato paste
1 tsp salt
3/4 tsp black pepper
1/2 tsp chilli flakes
1/2 tsp paprika powder
2 to 3 eggs
Handful shredded mozzarella cheese
– Peel and grate the tomatoes till you form a cfoarse puree
– In a medium sized frying pan melt the butter and oil
Sauté the onions and green peppers till softened
– Add the tomato paste and puree. Mix well
– Add the spices. Cover and cook for 5 to 10 minutes on medium flame till the tomatoes are soft & cooked
– Lower the flame and add the eggs. Scramble with a spatula and top with cheese and chilli flakes
Cover the pan for 5 to 7 minutes till the cheese has melted
– Garnish with parsley or green onions. Serve hot with bread.
