This famous salad from Thailand is one of my favourites. It’s so cooling, refreshing & filling, I’m sure you’ll love it too. I add lots of fresh coriander cause I really love the flavour, however you can add just 1/2 of it.

1/2 raw papaya, julienned
2 fresh red chillies
4-5 garlic cloves
5-6 beans
1 tomato, cut into eights & deseeded
1 lemon; squeeze and then throw in the peel
1 tbsp jaggery powder or more
1/2 carrot, julienned
Handful of coriander leaves, finely chopped
1/4 cup roasted peanuts
1 tbsp light soy sauce
2 tbsp tamarind puree
Salt to taste
Coriander leaves to garnish
In a large mortar & pestle, add in the red chilli & garlic & pound it well. Add in the beans, & smash that lightly too. Add the tomato, lemon juice & its peel& smash it a couple of times. Add the jaggery, carrot, coriander, peanuts, light soy sauce, tamarind puree, salt & smash it a couple of times. Add the julienned raw papaya & mix it well, smashing it a few times too. Serve immediately with a drizzle of the dressing & coriander leaves & dig in.!

If you don’t have a mortar pestle this big, you can just smash the garlic and red chillies in your small mortar and pestle add lemon juice and peel too and mix everything else in a largeSome chopped coriander and crushed peanuts
