Mason Jar Meals | Healthy Vegan Meal Prep

Hey loves! It is officially 2020, time to nourish our bodies! My favourite way to get back on track after the holidays is to MEAL PREP! Here are two of my favourite meal prep meals – Taco Salad and Mediterranean Salad. Hope you guys enjoy! xx

Mediterranean Jar:
*Ingredients*
Hummus
1 cup Quinoa uncooked
1 Onion (chopped)
1 can Chickpeas (drained and rinsed)
1 Tomatoes (chopped)
1 Bell Pepper (chopped)
6 Falafels
Leafy Greens (Kale/Spinach)
Hemp Seeds (optional)

*Instructions*
Begin by cooking the quinoa and falafels according to instructions. Set aside.
I personally like to mix the hummus with warm water and/or lemon juice in order to make it more of a dressing-like texture. Set out 3 mason jars and pour the hummus into each one.
Divide the rest of the ingredients equally into each of the jars – cooked quinoa, onion, chickpeas, tomatoes, peppers, falafels, kale, and hemp seed.

Taco Salad:
*Ingredients*
1 package Veggie Ground I use Yves
Salsa
1 small Onion (diced)
1 can Black Beans (drained and rinsed)
3/4 cup Grape Tomatoes (quartered) / 1 Large Tomato (chopped)
1 can Whole Kernel Corn 341ml
1 Bell Pepper (diced)
Leafy Greens (Spinach/Kale)
1 Avocado peeled and diced

*Instructions*
Heat skillet and cook veggie ground according to instructions (optional to add mushroom, onion, and taco seasoning). Remove from heat and set aside.
Set out three mason jars. Divide salsa into the bottom of each jar.
Begin to layer ingredients divided equally amongst each jar – onion, black beans, tomato, corn, veggie ground, peppers, spinach, and avocado.
