Onion prep
– Peel and slice 19 Onions
– Freeze 5 Sliced Onions
(Use 14 Onions for the curry sauce)
Curry Sauce ingredients
– 14 Sliced Onions
– 18 Sliced Tomatoes
– 2 cups Sunflower Oil
– 6 tablespoon Garlic & Ginger Paste
– 3.5 tablespoons Salt
– 4 tablespoons each Garam Masala, Ground Cumin, Ground Coriander
– 2 tablespoons Ground Turmeric
– 3 teaspoons Red Chilli Powder
Chicken Drumsticks ingredients:
– 2kg Chicken Drumsticks (with skin)
– 3 tablespoons Sunflower Oil
– 3 tablespoons Tandoori Masala
– 1 teaspoon Salt
– 1 teaspoon Red Chilli Flakes
– 1 tablespoon Ground Cumin
– 1 tablespoon Garam Masala
– 2 tablespoons Lemon Juice
– 1/2 cup Greek Yoghurt
Keema & Potato Samosas ingredients:
– 2kg Lamb/Mutton Mince
– 3 tablespoons Sunflower Oil
– 3 Diced Onions
– 3 tablespoons Garlic & Ginger Paste
– 1kg Potatoes
– 1.5 tablespoon Salt
– 2 tablespoons each Ground Cumin, Garam Masala, Ground Coriander
