Valentine’s Day is so much fun with a toddler!

My husband and I also LOVE this pasta.. so we can sit down as a family and have the SAME meal which is a huge win (iykyk).

This recipe is great for a busy day anytime throughout the year because it’s so quick and easy. Plus, goat cheese + beets are a match made in heaven.

Here’s my recipe (save! 🏷️)

Cook 1 cup of pastina according to package instructions (I love using bone broth or any kind of stock to cook the pasta instead of water. It makes this meal even more nutritious and adds depth of flavor). Once done, immediately stir in 2 Tbsp unsalted butter to keep it from sticking.

Peel, quarter and roast 1 beet on a parchment lined baking sheet at 450F for 25 mins or until fork tender (can sub canned beets).

To a high speed blender, add:
Roasted beet
2 peeled and chopped (uncooked) zucchini
4oz goat cheese
1/2c milk
1/4 tsp sea salt,
2 Tbsp olive oil

Blend until creamy smooth and pour over the cooked pastina.

Optional toppings (for the adults): more goat cheese, grated Parmesan, toasted walnuts.
